Banana Bread

3/4 cup Bitty all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup + 1 tablespoon evaporated cane juice
1 egg 1/4 cup oil 2-3 bananas, very ripe & mashed
1 tablespoon Greek yogurt
1 teaspoon vanilla extract
1/4 cup walnuts, toasted & chopped (substitute chocolate chips for a sweet treat)


Preheat oven to 330º F and line a loaf pan with parchment paper. Sift together Bitty flour, salt, cinnamon, & baking soda. Beat sugar and eggs with a whisk or hand mixer until light and fluffy. Slowly drizzle in oil. Add mashed bananas, yogurt, and vanilla. Fold in dry ingredients and nuts or chocolate chips. Pour into the lined loaf pan and bake for 50 minutes or until the middle is set.
